Homemade Sweet Green Hollywood Salad

  • 2-3 handfuls of mixed greens
  • 4-5 oz roasted chicken
  • 1-2 tablespoon crushed roasted almonds
  • 1/4 cup grapes
  • 1/4 cup diced cucumbers
  • 2-3 tbsp raisins
  • 1-2 tbsp goat cheese

Top with your favorite dressing! I used a simple balsamic vinaigrette!

Zesty Lime & Mango Chicken Salad

  • 2-3 cups of romaine and mixed greens
  • 4-5 oz roasted chicken
  • 1/4 cup diced red onions
  • 1/4 cup diced tomato
  • 1/2 avocado
  • Fresh squeeze of 1/2 a lime
  • Tortilla chips (optional for added crunch)

I used a delicious Sweet & Spicy Mango dressing from Trader Joe's to give it a little mango and lime zest. It was amazing! I hope you enjoy!

Curried Chicken Couscous

Serves: 8 (1/2 cup couscous and 3/4 cup chicken each)

Prep Time: 15 min

Cooking Time: 27 min



  • 2 cups water
  • 1 tsp sea salt (or Himalayan salt), divided use
  • 1 cup + 2 Tbsp dry whole-grain couscous
  • 2 Tbsp all-purpose flour
  • 2 Tbsp curry powder
  • 2 lbs. raw chicken breast boneless, skinless, cut into ½-inch strips (or bite-sized pieces)
  • 1 Tbsp extra-virgin organic coconut oil
  • 2 cups canned light coconut milk 
  • 1 1/2 cups finely sliced (into matchstick-sized pieces) carrots (approx. 3 medium)
  • 1 1/2 cup raisins
  • Chopped fresh cilantro (for garnish; optional)



  1. Heat water and 1/4 tsp. salt in medium saucepan over medium-high heat. Bring to boil. 
  2. Add couscous; mix well. Remove from heat. Let stand, covered, for 5 minutes. Remove cover and fluff with a fork. Set aside.

Simple Oatmeal Banana Nut Cookies

I was craving a small treat over the weekend so I decided to make these healthy and delicious Oatmeal Banana Nut Cookies! There's no added sugar (just natural sugar from the bananas) and they're super easy to whip up!
As you know, I'm all about living that 80/20 lifestyle. And if I can make that 20% a little bit healthier, I'm all about it! Just know that almost EVERY dessert has some "healthified" version of it. You just have to get a little creative in the kitchen!



  • 1cup dry old-fashioned rolled oats, gluten free
  • 2 tsp ground cinnamon
  • 1/4 tsp sea salt (or Himalayan salt)
  • 2 medium ripe bananas, mashed
  • 1/4 cup golden raisins
  • 1/4 chopped raw walnuts



  • Nonstick cooking spray

Crockpot Chicken Tortilla Soup With Kale

For the Soup:

  • 16 oz chicken breasts (~2 large)
  • 4 cups kale, deboned
  • 1 28 oz. can crushed tomatoes
  • 1 15 oz. can black beans
  • 1 15 oz. can sweet corn
  • 1 4.5 oz. can green chiles
  • 1/4 cup lime juice
  • 2 tablespoons minced garlic
  • 2 tablespoon chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 2 teaspoons garlic powder
  • 2-3 tablespoons Frank’s Red Hot (depending on how hot you like it)
  • 48 fl. oz. chicken broth (~6 cups)
  • 1/4 cup nonfat greek yogurt
  • For the spicy tortilla strips
  • 8 small corn tortillas
  • 1-2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • salt and pepper, to taste




For the Soup

  1. Place all ingredients (minus the Greek yogurt) in your crock-pot.
  2. Turn to high and let cook for 3-4 hours*. Once your chicken is cooked all the way through, remove and shred. Then, place back in crock-pot. Add Greek yogurt and mix until combined.

Paleo Meatloaf

Serving Size: Serves 6-8 people


For the Meatloaf: 

  • 3 lbs ground beef
  • 1 egg
  • 1 med onion
  • 2 cloves garlic
  • 1 8oz can tomato sauce
  • 1/2 cup almond meal or flour
  • 1 1/2 tablespoons Italian seasoning
  • 1/4 teaspoon paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon pepper

For the Topping:

  • 1 8oz can tomato sauce
  • 2 teaspoons Italian seasoning


1. Preheat the oven to 350 degrees.
2. In a large bowl or mixer combine all meatloaf ingredients.
3. Place meatloaf mixture into a greased pan. (I used 2 bread        pans)
4. Bake for 1 hour or until inside is no longer pink.
5. Remove from oven and top with the tomato sauce and Italian seasoning mixture.
6. Serve immediately and enjoy!

Pizza Flavored Turkey Meatballs

  • 1 pound of responsibly raised, lean ground turkey
  • 1/3 cup of ground oatmeal
  • 2 teaspoons of FlavorGod Pizza seasoning (& more to top!)
  • Extra virgin olive oil
  • 1/4 cup of carrot, minced
  • 1/2 cup of onion, minced
  • 1 large cage free egg
  • 1 teaspoon of Italian seasoning
  • 1/2 teaspoon of pink salt or sea salt
  • 2 cloves of garlic minced



  1. In a blender, add oatmeal, FlavorGod, salt, and Italian seasoning and blend until your oatmeal resembles a flour. Set aside.
  2. Now, either mince by hand or add 1 small red onion, 2 garlic cloves, and about 1 medium carrot to a food processor and process until produce is minced!
  3. Preheat oven to 350 degrees F
  4. In a large bowl, combine ground turkey, flour mixture, and the onion mixture and mix until combined!
  5. Now, spray a large cookie sheet and scoop 1 tablespoon of meat mixture and roll into a meatball. You should be able to make 5 rows of 4 meatballs!

Almond Apple Chicken Salad

  • 1 ½ Cup chicken, shredded or cubed
  • 1 cup red grapes, chopped
  • 1 Cup apple, chopped
  • 3-4 Tablespoons toasted sliced almonds
  • Cup mayo (I used Primal Kitchen)

Kale Waldorf Salad With Avocado & Goat Cheese

Mmmm..I absolutely love goat cheese! I never buy it either so it was definitely a treat to make this the other night paired with other delicious ingredients such as apples, cranberries, walnuts, and avocado! It is jam-PACKED with good-for-you nutrients and will keep you full and satisfied!

We decided to opt out on the chicken because we had another protein dish on the side, but feel free to use chicken (or any protein of your choice) to make it a fully balanced meal.



  • 1 bag baby kale (about 6-8 cups)
  • 1 granny smith apple, chopped
  • 1/2 cup seedless red grapes, halved
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled goat cheese
  • 1/2 medium ripe avocado, diced or sliced
  • 2 leftover grilled chicken breasts (8 oz), diced into cubes
  • 1/4 cup walnuts halves (1 oz)


  • 2 tablespoon extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 garlic clove, minced
  • 1 teaspoon dijon mustard
  • Salt and pepper, to taste
